Fried Halloumi Salad w/ Citrus Apple Slaw

This is a really simple, fresh, delicious salad.

It might not look like much, but trust me!! There’s an explosion of flavor inside that you’re going to be obsessed with.

Fried halloumi might be mistaken for a classy mozzarella stick, and I’m okay with that. It’s got crunch, texture, and loads of cheesiness, so I can see where the parallels can be made. But alas, those details are where the similarities end. That’s because this halloumi is “fried” in a skillet greased in olive oil spray, not dunked in a tank of oil. And because of halloumi’s high melting point, it doesn’t really melt during pan-frying either. Instead its texture remains firm, and chewy, making it a glorious accompaniment to this salad.

What I love most about this recipe is that it’s fast, crisp, and FRESH. You’d think the cheese would bring things firmly into savory territory, but thankfully that’s not the case. Instead the halloumi’s naturally briny flavor (so good) adds balancing contrast against sweet sliced apple, bitter green cabbage, and a tangy lemon dressing. It’s all sorts of invigorating, and it’s ready in about 15 minutes.

You start by slicing the halloumi into rectangular pieces, then dredging it in egg + Italian bread crumbs. Heat a skillet over a high flame, amply coat with olive oil spray, then fry for about 2 minutes on either side. The halloumi will become all golden and crisp in no time, not to mention make your kitchen smell like Mediterranean bliss.

Once the halloumi is fried all that’s left to do is prepare the remainder of the salad. A simple dressing of lemon juice, lime juice, olive oil, and sugar does the trick, adding loads of juicy, tantalizing tang. Pour the dressing over a mix of green cabbage and scallion, the plate over the fried halloumi. Add sliced honeycrisp apples + chopped hazelnuts before serving, and you’re done!

Fried Halloumi Salad w/ Citrus Apple Slaw

Ingredients:

  • 7 ounces halloumi cheese
  • 1 large egg, whisked
  • 1/3 cup Italian breadcrumbs
  • 1 – 2 limes, juiced (if they’re really small, make it two!)
  • 1/2 lemon, juiced
  • 1 1/2 tbsps extra virgin olive oil
  • 1/2 tsp granulated sugar
  • 3 cups thinly sliced green cabbage
  • 2 scallions, chopped
  • 2 honeycrisp apples, halved, cored, and sliced
  • 1/4 – 1/3 cup chopped hazelnuts
  • olive oil spray to coat

Directions:

  1. On a cutting board slice the halloumi into equal sized rectangular pieces. Next, dredge each piece in egg, then coat in breadcrumbs on all sides. Return to the cutting board until needed.
  2. Heat a large skillet over a high flame, then amply coat with olive oil spray. Four pieces at a time, fry the halloumi for approximately 2 minutes on either side until crisp and golden. Transfer to a wire rack to cool, repeating until all cheese has been fried. Re-grease the skillet with olive oil spray between each batch.
  3. When ready, in a small mixing bowl combine the lime juice, lemon juice, olive oil, and sugar, whisking well. In another mixing bowl combine the green cabbage and scallion. Pour the dressing over the cabbage mixture, tossing well.
  4. Evenly disperse the fried halloumi across four plates. Top with the dressed cabbage, then add sliced apples + chopped hazelnuts to each plate. EAT!
