I’ve secretly been eating lots of brussels sprouts.

Like… a ton of brussels sprouts.

I’ve basically eaten them everyday for two weeks, which means things are clearly getting out of control.

Do I have another BLT situation on my hands?  Quite possibly.  But hey, at least this is healthier.

So rather than continue to keep my brussels madness a secret, I decided to come clean about my latest food obsession.  And this Proscuitto, Smoked Gouda, and Brussels Sprouts Frittata?  Let’s just say it’s not helping me kick my habit.

I know a lot of people are still ambivalent about brussels sprouts.  On the one hand, you want to be an adult and act all adult-like about eating your veggies.  And on the other, brussels sprouts are still those icky green buds your mom forced you to eat as a kid, and some things you just don’t recover from.  The thing I’ve found about brussels is that they need some TLC.  I guess there are some raw/Vegan types who can eat them on their on, but.. have we met?  Cheese is my life.  So since I’m not going to be following the straight-from-nature approach, I sought out to make brussels more appetizing without completely diminishing their veggieness.

Remember diet-y?  We’re adding veggieness to the CwC dictionary.

The first (and only) time I made veggies for you, it was Caramelized Brussels Sprouts and they were fantastic.  I dressed them in EVOO, sautéed them in light butter, and roasted them to perfection with a sprinkling of parm reg.  They managed to stay healthy while being outrageously tasty, and from that point forward I knew I had something good.  Since that recipe I’ve paired them with marinara sauce and mozzarella, sautéed them in sesame oil and drizzled with sweet chili sauce, and of course I remade my caramelized version a few dozen times.  But for all my experimentation, I never got around to incorporating them with other foods.

Until now.

We’ve previously discussed how finicky my dear Dave can be, and frankly I believe most men share this annoying endearing quality.  Women are just more experimental by nature, don’t ya think?  We change our style, change our hair, and we change our minds about said hair and style roughly every 30 seconds.  Whereas men?  They basically have a uniform of button down shirts, jeans, polos, and shorts.  The biggest variety they’ve ever know is experimenting with a pink oxford or dark wash denim.  And their hair?  Likely that hasn’t changed since they were 16.  Unless, you know, they go gray or lose it.  But neither of these are active choices.  So when you think about it, we shouldn’t be surprised that our guys give us the side-eye over quinoa, and pomegranate seeds, and brussels sprouts.  What’s wrong with rice?  What kind of fruit is a seed?  And get those brussels the hell out of here!

So since serving straight up brussels sprouts might be too aggressive for your man, I’ve devised a clever little solution called Prosciutto, Smoked Gouda, and Brussels Sprouts Frittata.

This dish is successfully sneaky in a few ways.  First I roughly chopped the brussels sprouts, giving them a lettuce like appearance that’s nearly impossible to detect once it’s incorporated in the frittata.  Next I threw in some cubed prosciutto, because men like meat and they looove Italian meat, so this is the perfect salty distraction.  And finally, I threw in a mound of shredded smoked gouda cheese, because honestly – if your man doesn’t like cheese, do you really love him that much?

Kidding.  Sorta.

With my deceptive trifecta in place, there’s no way this dish can go wrong.  Not only will your guy be loving it, but I’ve kept you ladies in mind, too.  To balance out the fat from the meat and cheese, I enlisted light butter, a splash of EVOO, and a mix of eggs and egg whites to lend that perfect, healthy balance.  And obv, the brussels are really just for you.

Veggieness is truly a girrrl thang.

  • 3 Large Eggs
  • 5 Large Egg Whites
  • 5 oz Cubed Prosciutto (I used Citterio)
  • 2 cups Chopped Brussels Sprouts (~8 oz)
  • 3/4 cup Shredded Smoked Gouda Cheese
  • 1 cup Diced Yellow Onion
  • 1 cup Diced Cherry Tomatoes
  • 2 tsps EVOO
  • 1 tbsp Light Butter (I used Land O Lakes)
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Sea Salt & Coarse Black Peppercorn – approx.


  1. On cutting board dice cherry tomatoes, then set aside. Next, finely chop brussels sprouts before placing in large bowl. Dress with EVOO, garlic powder, and a few dashes salt & pepper, then set aside.
  2. Shred smoked gouda. In another large bowl, whisk egg, egg whites, and a few dashes salt and pepper. Add in shredded gouda, then whisk again until well combined. Set aside.
  3. In large skillet melt light butter, then add in onions and saute over medium high heat until soft and translucent. Next add in prosciutto, turning heat to high and tossing until crisp, ~7 minutes. When prosciutto has crisped, add in brussels sprouts and saute until soft and lightly browned. Lastly, lower heat to medium before stirring in tomatoes.
  4. When all ingredients are well mixed pour over with eggs, evenly distributing them throughout the pan and allowing to cook untouched for 2-3 minutes until the edges of eggs are set. When ready, transfer to oven and bake at 400F for 10 minutes, then broil for 3 more. Once crispy and browned, remove from oven and allow to cool slightly. Plate & serve.
