It’s a lot of goodness on one slice of bread.

Toasts are one of those incredible foods that look super posh with barely any effort, so they’re the perfect resource for the lazy cook. Personally I like to think of a proper toast as a type of large crostini, with extra crisp bread, lots of toppings, and tons of texture all part of the scheme. It makes for an easy go-to lunch when you need something fast & filling with minimal effort, or for when you’re feeding a crowd, too.

A little breakfast/brunch action? A little happy hour nosh?

This toast can work for both.

Because this “recipe” is literally bread + toppings, I’m not going to mince my words — This toast is AMAZING, and you need to be eating it. Now I know what you’re thinking: It’s just a damn piece of toast! I get it — Toast is toast, the sky is blue, and I’m kinda gorgeous. But when you get the right combination of sweet, savory, and fragrant all in one epic toast bite, the taste is just SO satisfyingly perfect that you can’t help but be excited about it.

And you can feel healthy about this, too, because there’s fruit!

Fruit makes everything healthy.

Obviously cheese + carbs is a winning combination no matter what the circumstance, but something about the creamy brie mixed with the sweet tangy fruit and aromatic thyme takes this to a whole other level of delicious. Unsurprisingly you don’t need to be a brain surgeon to make this — Coat some bread in olive oil, then toast for 5 minutes. Once the bread’s crispy top with sliced brie + a few springs of thyme before toasting 5 minutes more, then pile it high with fresh berries, an offensive drizzle of honey, and a liberal dash of pink Himalayan sea salt.

Wham, bam, this is healthier than ham.

I love this for a Monday lunch when you’re cleaning out the weekend’s leftovers, or for Sunday brunch with friends. It’s easy — and beautiful!! — for entertaining, and obviously the summer seasonality is completely on point. Best of all, you can easily scale this recipe to feed yourself, a crowd, or a couple, so do you!

10-Minute Brie & Berry Toasts

Ingredients:

  • 3 slices Whole Wheat Sourdough Bread (or bread of your choice)
  • Extra Virgin Olive Oil
  • 6 oz Brie Cheese, sliced
  • 6 springs Fresh Thyme + more for garnish
  • Mixed Berries (the more variety, the better!)
  • Honey
  • Himalayan Pink Sea Salt

Directions:

  1. Pre-heat oven to 400F.
  2. Using a pastry brush coat bread slices in a thin film of EVOO, then bake for 5 minutes until just beginning to crisp. Remove from oven and evenly distribute the sliced brie and sprigs of thyme across the slices, then bake for another 5 minutes until the brie is melted and bubbly.
  3. Immediately top with mixed berries, honey, and himalayan sea salt, then eat!
