10-Minute Fiery Strawberry Mint Salsa
Is this a mouthful of a title?
Yes it is.
But the name is accurate. This salsa takes 10 minutes (that’s fast baby). It’s fiery as hell (hi jalapeños!). I used mint instead of cilantro (CLUTCH choice). And it’s exactly what you’ll be eating all summer long.
When a recipe is this easy I struggle with writing a post that’s helpful without being condescending. Like, if you’ve ever boiled water (you have, yes?) then you know the basic salsa gist. But because this is a blog and writing is vaguely important, I need to write words. So I’m going to tell you why this is tasty, WHAT to drink it with (critical), and a few brief notes on preparation. There will be jokes, and knowledge, and salsa!
So much salsa.
I wanted this salsa to be a combination of spicy, sweet, and fresh, and suffice it to say I succeeded on all fronts. You start with the plumpest strawberries you can find, then dice ’em to your liking. Add some diced tomato, red onion, and jalapeños (HEAT) to the mix, and you’re already almost finished. A ratio of 2-1 strawberries-to-tomatoes makes this sweeter and more texture-rich than your average fruit salsa. While the red onion adds a pop of color and a touch of assertive spiciness. And the jalapeños, of course, lend fiery intensity that’s amazing. There’s just something about the contrast of the super sweet strawberries next to the raw, crisp, hot jalapeños that’s so damn yummy. You’re just gonna have to make this yourself to see.
A few squeezes of lemon + lime juice (tang!), drizzles of honey (sweet + sticky), and a pinch of salt & pepper (duh) round this out. Plus the finishing touch of mint, which… damn. It’s SO GOOD. Refreshing, cool, crisp, it takes this salsa to another level that’s so crazy tasty to enjoy.
As for a beverage? Quality tequila on the rocks is the obvious choice. But if that’s a little too boozy, a classic marg, a crisp glass of sauvignon blanc (New Zealand, specifically!), or white sangria are all perfect.
Just make sure you double the below for a crowd, because this baby goes fast. Xo
