Things get started with maple teriyaki butter, a concoction that’s exactly how it sounds — quality maple syrup, teriyaki sauce, and salted butter. Whisk these three ingredients together, and you’re already half-way to dinner. Once the butter is prepped it’s time to cook the mahi, which is another blink-and-you-miss-it process. Simply dust each filet with a thin-film of sugar, then sear sugar-side down for 1-2 minutes! A quick flip will reveal the crispiest, most golden sear you’ve ever seen on a piece of mahi, it’s truly glorious. And yes, before you roll your eyes any further (I see you!), I am talking about sugar… on FISH. It sounds strange, sure, but this fail-proof technique is life changing!

Not to mention trendy, which is the most important part.

Once the mahi is seared and flipped, immediately transfer it to the oven to finish cooking. Just a handful of minutes later you’ll be enjoying the most golden, crisp, gloriously flaky mahi mahi ever! One that’s lacquered in maple teriyaki butter, then inhaled even faster than it took to make it.

10-Minute Maple Teriyaki Mahi Mahi

Ingredients:

  • 2 tbsps salted butter, softened
  • 2 tsps maple syrup (I prefer organic grade B)
  • 2 tsps teriyaki sauce
  • 1/2 lb – 2/3 lb wild caught mahi mahi
  • a pinch of granulated sugar
  • sesame seeds to garnish

Directions:

  1. Pre-heat oven to 400F.
  2. In a small mixing bowl combine the butter, maple syrup, and teriyaki sauce until well combined. Next, sprinkle the top of each mahi mahi filet with a thin film of sugar.
  3. Heat a cast-iron or oven proof skillet over a medium-high flame, then add 1 – 2 teaspoons of the maple teriyaki butter, swirling to coat. Add the mahi mahi to the skillet, searing sugar-side down until golden, about 2 minutes. Gently flip the fish, then transfer to the oven and bake on the middle rack until cooked through, about 5 – 7 minutes depending on the thickness of each filet. Once cooked, use a pastry brush to coat the mahi in the remaining maple teriyaki butter, then eat! Garnish with sesame seeds if desired.
