Current mood: eating these toasts 24/7.
It’s safe to say that if you love caramelized onions, you are destined to adore this toast. I happen to love onions pretty much any way I can have them — pickled, fried, caramelized? yes yes yes — so for me, this toast is perfect.
You start by caramelizing the onions, which is a bit of an artform unto itself. The trick with caramelizing is patience, and as a New Yorker, I have none. But when it comes to onions, I somehow manage to take it slow and let the onions do their thang. That “thang” being sautéd in olive oil over a medium-high flame for about 30 minutes.
30 minutes doesn’t sound too bad, I know. But here’s the thing — you need to stir them routinely. Like, every five minutes. So while this is admittedly a bit annoying, it’s also completely worth it. You want your onions to evenly cook up golden and tender, not crisp and burnt. Constant attention is the only way to achieve this, so throw on a podcast and listen while you stir.
When the onions are nearly finished, lightly toast slices of sourdough bread in the oven (like 2 mins) then pile high with baby spinach, onions, and an offensive serving of cheddar cheese. Pop back in the oven until hot and melty, season with everything bagel seasoning, then eat!
It takes a bit of time, but these honestly couldn’t be simpler.
The combination of crisp bread, buttery onions, and sharp cheddar cheese is SO good. It’s like an American variation of french onion-soup… on toast. Add to that some spinach for some health + greens (yum) and this couldn’t be more delightful.
Except… it COULD. Because that everything bagel seasoning on top is straight genius! It adds a nutty, garlicky, slightly salty finish that brings this straight into savory heaven. I truly couldn’t love this little toast more, and I’m confident you will too. Xo
