Requiring only 4 ingredients is clearly a clutch (and headlining!) characteristic, but the true beauty of this recipe lies in its wonderfully low-maintenance execution + subtle burst of bourbon — Together these two factors ease you back into the workweek with a meal that’s fast, fit, and just a touch boozy, which is exactly how all Monday’s should be.

If you’re a wings-eating kinda chick, then congratulations — You’re most definitely a drumsticks girl too. Now obviously drumsticks aren’t the leanest part of a chicken, but they do provide a great mix of light & dark meat and develop incredible texture once cooked (charred crispy skin + tender, juicy insides? YES!) so I’ve always been partial to them. But my absolute favorite reason to eat drumsticks is that they’re the kind of food you can be completely savage with — Gnaw on the bones, swipe marinade across your cheeks, grunt when you’re finished? Do it all.

A simple mix of peach preserves, apple cider vinegar, and bourbon create a quick-fix marinade that’s prepped on the stove in <10 mins, so this recipe really couldn’t be easier. From there simply slather half the marinade over salt & peppered drumsticks, then grill! The remaining marinade will be used for serving once the chickens cooked, and the chicken itself grills up in a mere 20 – 25 minutes.

Easy? Stupid easy!

As far as the grilling goes, drumsticks are fairly resistant, so rest easy — You’ll have a hard time overcooking them. Extra clean grill grates are always a good idea, and you can brush them with a touch of olive oil too. But no matter what measures you take losing some skin to the grates is still pretty likely, so take it in stride — As long as the drumsticks taste good, looking a bit wonky is NO big deal.

But once the drumsticks are cooked and in various states of imperfection, that’s when the real fun begins. Sweet, sticky, and with a touch of tang, these are guaranteed to be devoured in no time. The bourbon lends an oaky flavor that positively dances when cooked over the smokey grill, and the chunks of peaches from the extra marinade are plump, delightful, and pure summer.

Ingredients:

  • 15 oz Peach Preserves
  • 3 tbsps Apple Cider Vinegar
  • 3 tbsps Quality Bourbon
  • 2 lbs Chicken Drumsticks
  • a few dashes Salt & Pepper
  • fresh Thyme for garnish (optional)

Directions:

  1. Pre-heat outdoor grill to medium-high heat.
  2. In large skillet combine the peach preserves and apple cider vinegar over medium-high flame, covering until a rolling boil is reached. Next, add bourbon and reduce flame to low before covering once more and allowing all ingredients to simmer for 5 minutes.
  3. Meanwhile, on cutting board amply salt & pepper the drumsticks, then transfer to large mixing bowl.
  4. When ready, pour ~50% of the peach mixture over the drumsticks, tossing gently to combine. At this point you can begin to grill immediately OR marinate the drumsticks up to 8 hours/overnight — the choice is yours!
  5. Grill drumsticks until cooked through, turning every 5 minutes until finished at around 20-25 minutes. Cook times will vary slightly depending on the strength of your grill and the size of the drumsticks – They’re finished when juices run clear and they are firm to the touch. Serve with thyme, and devour!
