“Mighty Maple” Peanut Butter Quinoa Crunch
What, exactly, is peanut butter quinoa crunch?
The short answer: Breakfast’s new best friend.
The long answer: A delicious, easy alternative to granola that’s loaded with protein and fiber to keep you energized all day long.
The best answer? PEANUT BUTTER. Stop asking questions.
I’m delighted to bring you another recipe featuring Peanut Butter & Co. PB, and for this little ditty I went with their delicious Mighty Maple. Maple syrup is a classic breakfast staple, so fashioning this flavor into a breakfast-approved dish seemed like a natural conclusion, and luckily for once I was right.
The inspiration for this crunch was my tried and true granola habit. As an unabashed texture freak I can’t even imagine having yogurt without granola (like, whyyy?), but doing the same old thang day-in and day-out quickly becomes a snooze. So I decided to make a new kind of crunch to jazz up my routine, and I happily found that its use goes far beyond my morning meal.
Thus far I’ve topped this crunch over yogurt and oatmeal, ate it solo on-the-go, and mixed it with fresh berries, to name a few. The possibilities are practically endless, and that’s one of the things I love about it most. But the other major pluses? The incredible PB + maple syrup combo is straight-up amaze, it’s sweet, nutty, and sinful without actually being bad. The <30 minute cook time is also pretty damn great, and of course the versatility (again) cannot be stressed enough.
Plus? PEANUT BUTTER.
I mean really, what else do you need to know?!
