Ridiculously Easy Pomegranate Mango Salsa
I’ve made you a sexy little cinco salsa.
And I think you’re going to majorly approve.
SO. Before we dive into how crazy easy this salsa is and how you need to be making it every damn day for the rest of your May, we need to have some life chat.
Life chat!
I’ve been totally keeping you in the dark on a million different life thangs, and it’s time I got you up-to-date. First, Dave and I moved into a new apartment two weeks ago and it is a serious kitchen upgrade. It’s big and spacious with black granite countertops and pretty tiled backsplash, it’s completely open to the living area, and (best of all!!), has a FULL SIZE RANGE/OVEN!

Yes! After years of slaving away on what I affectionately referred to as my easy-bake oven (seriously, it could not have been smaller), I am finally a real person with a normal size stove and normal size oven and, like, space to cook things. It’s a revelation, and I hope the new recipes I churn out will be equally upgraded, too.
What else? I’ve officially left the corporate world to do this blogging/writing/being awesome thang full-time. It’s a super scary feeling, but it’s also crazy exciting and 100% amazing, I couldn’t be more thankful to have the opportunity to make a career out of something I love.

What else, else?! I’m relieved it’s finally warm out, I’m psyched for my birthday this Friday!!!, and I’m seriously looking forward to posting on here more often. More chatting, more eating, more general happiness – You’re feeling it, right?

So ANYHOO – I made ya this salsa. It’s a ridiculously easy recipe so long as you know how to properly cut a mango, which, uhh… I didn’t. When I tell you I butchered my mango, I’m not being the slightest bit cheeky. I straight up ANNIHILATED this thing into scrappy disheveled pieces, it was a complete embarrassment. Apparently you should research things you don’t know how to do before doing them, so take heed and peep a video like this before you go all Lizzie Borden on a poor, innocent mango.
But beyond my mini mango drama, this recipe couldn’t have been easier. I am a notoriously slooow chopper (and mango assassin) so it took some time and patience for me to get my ingredients cut right. But in general, however long it takes you to chop and dice, that’s how long making this will be. For me that was about 20ish minutes, but again, I’m pathetic.
And if you’re surprised that this recipe includes a few drizzles of honey, don’t be! The honey not only accentuates the sweetness of the mango and pomegranate, but it brings out the jalapeño juices to make a sweet/spicy/citrus-y base that gives this salsa all the pop and pizzaz you’d expect of a cinco celebration. Plus, this is just so fun looking, isn’t it?! From the pearled pom seeds to the soft mango, juicy tomatoes, and crisp jalapeño, this is a candy-colored fiesta that I was double-dipping into within minutes.

Ridiculously Easy Pomegranate Mango Salsa
Ingredients:
- 1 1/2 cups Diced Tomatoes (approx. 2 beefsteak tomatoes)
- 3/4 cup Diced Mango (one mango will suffice)
- 2 tbsps Diced Jalapeño (approx. 2 jalapeños)
- 1-2 tbsps chopped Cilantro
- 1/2 cup Pomegranate Seeds
- 2 tsps Lemon Juice
- 2 tsps Lime Juice
- A few drizzles of Honey
- Pinch of Salt & Pepper
- Tortilla chips for serving
Directions:
- On large cutting board dice tomatoes, mango, jalapeños, and cilantro to directed amounts. Next, in large bowl combine all ingredients, tossing until well combined. Immediately serve or chill in refrigerator until needed.
