Six-Ingredient Chocolate Nut Butter Cups
Would you believe me if I told you this is actually kinda healthy?
Obviously what we’re discussing here is candy, so the health limitations are inherent. But with protein-packed nut butter, iron-rich dark chocolate, and loads of omega 3’s — crushed peanuts + cashews! — it’s a smart little splurge for a savvy little chick.
Since December is upon us I decided to kick off your baking binge with a delightful no-bake treat, because trust me — You’re gonna need it. About two weeks from now there will be a day when the mere thought of flour makes you itch, the SMELL of butter makes you cringe, and the sight of a no-slip mat will send you into a blind rage. Holiday baking IS TOUGH. So on that day when you’re about to freakin’ lose it, go home and make these nut butter cups instead.
To prepare this treat I partnered with my friends at Peanut Butter & Company using their new Bestie Almond & Cashew Nut Butter. As someone who has almond butter almost everyday, getting my hands on this was a revelation. SO many almond butters have a rough, almost sandpaper-y texture that’s practically impossible to enjoy. But Bestie? It’s incredible. Besides being vegan, gluten-free, and non-GMO, it contains only three ingredients (YAS!), and the taste is delicious. Thanks to the cashews this nut butter is smooth, creamy, and even a touch sweet, with all the benefits of raw nut butter. It’s been a game changer for my morning routine, just like these cups will shake-up your holiday season.
The gist here is simple, so any skill level can handle it. Line a cupcake pan with liners, then fill each with melted dark chocolate. Freeze for a bit, then top with Bestie, chopped peanuts/cashews, honey!!!!, and more chocolate. Throw ’em back in the freezer, and you’re done! So simple, so easy, and totally customizable for the holidays. I topped mine with sea salt just before freezing, but you can use sprinkles, pretzels, crushed candy canes, whatever! They’re fun, easy, and a lot less guilt-inducing than cookie dough.
